PX casks that have previously matured another spirit have always intrigued me. Much like my second release, which featured a PX Honey Cask, the idea of using a Pedro Ximénez cask with a history of holding brandy was irresistibly compelling.
Upon receiving the cask, its aroma was immediately captivating, rich and robust, with deep sherry notes beautifully interwoven with subtle hints of brandy absorbed into the wood.
The mash bill was a carefully blended selection of various new make spirit batches, incorporating multiple barley grains. Notably, one component featured UK-sourced peated malt, adding a further layer of complexity.
My goal was to craft something truly distinctive, and I believe the result speaks for itself: a bold, dark, and heavily sherried whisky with a unique character that stands apart from most expressions I’ve encountered.
For optimal enjoyment, I recommend allowing this whisky to come to room temperature before tasting. When warmed, the full depth and complexity of the spirit are truly revealed.
Nose: Dark and gritty with robust sherry, bitter roasted nut skins and hints of the peat.
Palate: Tart berry meets grape skins, bitter chocolate, jus, sun-dried stone fruits and aged oak.
Finish: Peat presents with a grippy pepper profile, More nuts, slightly drying and dark.

“A viscous, oily delight with an inviting sherry influence. The palate reveals deep, rich oak-forward notes intertwined with candies, figs, blackcurrants, dried tropical fruits, and a hint of savoury beef stock. Sweet, well-balanced finish, with peat and walnut undertones. Delectable.”
It has been our experience that they showcase their profiles, aromas and drink best around and above room temperature (between 18-23°C).
