Cask Origin: Single Cask with an undisclosed history that was initially an ex-bourbon cask before being used to mature Rum

This whisky comes from the smallest cask I’ve used to mature new-make spirit for a Woodwater release — a compact 67L cask.
Interestingly, I initially believed it to be an ex-Bourbon and Honey Spirit cask. As it turns out, there was a mix-up in the barrel order, and the cask had a rum history instead — an unexpected twist that turned out to be a happy accident.
This may well be the most delicate whisky I’ve produced to date, yet it shines with quiet complexity. It offers a unique array of flavours not often seen in my previous releases — subtle, distinctive, and thoroughly enjoyable.
A rare little gem, and one I’m genuinely delighted to share. I hope you enjoy this very limited release as much as I have.
Nose: A bright and engaging nose showing chewy oats, grain and corn syrup. Shortly after, this opens to a wonderful balance of caramel toffee and fruit sweetness.
Palate: Grain and light honey meet milk chocolate. Subtle tropical fruit enters.
Finish: This is where the influence of Rum emerges, revealing herbal tones, freshly cut sugarcane and vanilla. Its story ends lightly with a suggestion of roasted nut skins and sugar drops.
It has been our experience that they showcase their profiles, aromas and drink best around and above room temperature (between 18-23°C).
