This marks the second release of whisky matured in Red Gum casks.

A notable point of distinction is its age. At well over five years, it surpasses the first Red Gum release and is, to my knowledge, the oldest bottling of its kind produced in Australia to date.

In homage to the original Red Gum staves — once part of large winery vats used to hold fortified wine before being dismantled — the matured whisky was then finished in two 20L Seppeltsfield Tawny casks for a further five months. This secondary maturation was intended to reintroduce a more pronounced fruit influence to the spirit. The result, I believe, makes this the only Red Gum whisky of its kind produced to date.

The outcome is a whisky unlike any I have tasted. Bottled at a formidable 57% ABV, it is thick, rich, rounded and remarkably viscous. The journey is entirely unique, delivering a deeply engaging tasting experience with evolving character from nose through to finish.

The final reality is its rarity — just 45 bottles were yielded in total.

Tasting Notes

Nose: Baked red fruits and maraschino cherry layered with burnt molasses and charred oak.

Palate: A medley of dried berry fruits and very dark, bitter chocolate, complemented by a gentle salinity and a hint of cured meats. The first sip delivers a peppery alcohol prickle across the front of the tongue, followed by a broad, gripping mouthfeel.

Finish: Stone fruit skins emerge, quickly giving way to dried timbers and a sudden touch of waxiness.

A few drops of water soften the profile, introducing a creamier texture and revealing softer berry fruits before a campfire-led earthiness develops.

A distinctive dram, not for everyone, but one that will reward those who seek out unusual and characterful whisky experiences, particularly lovers of unique and unconventional flavour profiles.

It has been our experience that they showcase their profiles, aromas and drink best around and above room temperature (between 18-23°C).
