It’s no secret that I relish any opportunity to explore the weird and wonderful within the world of whisky.

When I came across a cask that had travelled the globe, maturing a range of different alcohols, I simply couldn’t resist the chance to work with it.

The name B.S.R. is an acronym reflecting the unique journey of these casks:
B for Bourbon, S for Scotch Whisky, and R for Red Wine — specifically from South Australia.

The opportunity to mature spirit in wood with such a rich and varied history was an irresistible experiment. I paired it with a complex mash bill, knowing the interplay between a ‘busy’ cask and an equally layered spirit could yield something truly unexpected and fun.

The result is a whisky full of intrigue, showcasing flavour combinations I’ve rarely encountered before. Rather than highlighting one specific element of the cask’s past, it has evolved into something uniquely its own — a bold, characterful and harmoniously balanced Whisky, with no single historic influence taking precedence.

It’s a testament to the magic that can happen when an adventurous mash bill meets a cask with a story to tell.

Tasting Notes

Nose: You’re immediately hit with an earthy tone. Star anise, honey, caramel and butter menthol all present with spirit settling into some hessian fabric and cedar wood.

Palate: Light mead, clove, orange marmalade and old dry oak with burnt caramel kick things off before a puckering mouthfeel shows from the alcohol. A second sip allows your acclimatised palate to enjoy the richness of these flavours without interruption by the heaviness of alcohol.

Finish: Candied sweetness emerges. Crumbly buttery shortbread and dark treacle with a drop of bitterness.

It has been our experience that they showcase their profiles, aromas and drink best around and above room temperature (between 18-23°C).
